Sweet Blanched Carrots in a Maple Glaze

Every once in a while I will stumble upon a dish I have never seen before, so instead of spending countless hours discovering a process I just ask the Chef. Luckily enough the Chef from this restaurant was glad to share his recipe with me, which of course I tweaked to make my own. Originally, the Chef sweet blanched these and chilled them on a cold plate to seal in the flavor and moisture. Of course I do not own a cold plate, and I couldn’t stop at one process. I am regretful that I did not take more pictures, but this was a last minute choice to include here, and I was too hungry to wait! These were a favorite of mine on one of my trips down south. Enjoy!

Serves 4

4 Cups Water

2 tsp Salt

2 tsp cinnamon

2 tsp nutmeg

4 Carrots, 1/16” bias cut

Place a cookie sheet ungreased in the refrigerator 30 minutes in advance. Boil water on high heat. Add salt, cinnamon and nutmeg. Once water is at a boil, add sliced carrots one handful at a time. Once carrots are placed in boiling mixture begin your glaze. In a skillet, follow the directions below for the maple glaze. Using a slotted spoon, move the carrots around so they do not stick together.

 

1/4 Cup Maple Syrup

1 Tbsp Butter

¼ tsp Cinnamon

½ tsp Ginger

1 Tbsp Brown Sugar

In a skillet, melt the butter with the brown sugar, ginger and cinnamon over low heat. Once dissolved completely, add the syrup and stir with a rubber spatula until the ingredients are well blended. Remove carrots after 5 minutes of boiling in the water and place immediately in maple glaze. Toss the carrots around in the glaze to coat evenly. As soon as carrots are evenly coated, remove each individual carrot and place on previously chilled cookie sheet. Place in refrigerator for 30 minutes or until completely chilled. Serve chilled on a plate accompanied by any fine cheese, prosciutto, or jam.

    Once mineral water is at a steam, add chopped green beans one few at a time. Once green beans are placed in steaming combination start your glaze. In a container, adhere to the guidelines below for the walnut glaze.
