Fresh Berry Salad with Honey Lime Vinaigrette

It's about that time of the year when we all start looking to our figures. People cutting carbs, drinking slim-fast, eating those disgusting little rice cakes. Me, well I prefer to enjoy my food. Eating healthy when trying to slim down doesn't have to be starving yourself, nor does it have to be what seems to look like chocolate milk but tastes like fish scales. I could write a 50 page blog entry about how to eat healthy but who in the world would want to sit and read that?

Instead, what I will do is give you some healthy eats that actually taste good. Each of the next few blog entries will have a special ingredient from my Leather Bound Book. This one is a delectable honey lime vinaigrette that I discovered in my travels down south. Enjoy!

Serves 4


2 heads of romaine, chopped

8oz bag of Spring Mix (or any other time of mixed greens you prefer)

1/4 lb box of fresh Strawberries

1/4 lb box of fresh Raspberries

1/4 lb box of fresh Blueberries

Chopped pecans (you can find them in the fresh vegetable isle)


Dressing: (Serves about 12 in case you want more for later)

1/4 cup fresh lime juice

1/3 cup honey

1 finely minced garlic clove

1 teaspoon balsamic vinegar

1/4 teaspoon cumin

1/2 teaspoon kosher salt

1/2 teaspoon ground black pepper

3/4 teaspoon fresh chopped cilantro

1/2 cup extra virgin olive oil


Start off with the dressing first. When I first started out in the restaurant industry (as a dishwasher in a German restaurant), I was always told by the Chefs that making an oil based dressing was the hardest thing in the world. If you did one step wrong it would terribly array. They were completely full of it. If you mess this process up in any way just shake it in a jar or bottle for a while, problem solved.

Begin mixing the honey and lime juice with either a blender or with a whisk. I prefer using my hands instead of a mixer for two reasons: You don’t have to wash more than one piece, and it makes you look cool to whoever you’re cooking for. Add the spices, fresh cilantro, balsamic vinegar and garlic. I hear from people all the time that they pass up great recipes because they do not have the stated spice or herb on their shelf at home. So I will tell you the same thing I tell them: Google a substitute. There are very few herbs or spices out there that do not have something you can substitute in its place. It may not be exact, but that is also what makes the food yours and not some guys on the other end of the computer.

I digress. While still mixing slowly pour the EVOO (extra virgin olive oil) into the mixture. Keep a steady stream until it is mixed completely. Like I stated before, I was always told if you don’t keep that steady stream the dressing is ruined and you have to start all over. This is completely untrue in my opinion. If you slip just keep mixing, forever basically, until it is fully incorporated. Taste it. If it is not to your liking change something with it, add a little this, or a little that. What’s the worst that can happen?

After you chop your romaine and toss with your mixed greens, wash all your fruits with cold water. The only fruit you have to slice is the strawberries. Slice them long ways in about ¼ inch slices. You can cut them thinner or thicker depending on your liking. Toss the fruit with the salad. Upon serving sprinkle the salads with your pecans, and drizzle with the honey lime vinaigrette.

It is a light meal that is surprisingly filling but oh so healthy.
